Ben Lockett served his apprenticeship in the Blue Mountains in Blackheath at the famous Vulcans Restaurant, under he stewardship of seminal chef Phillip Searle. The city called and Ben soon found himself working under Matt Moran at Aria before moving into private catering all across Sydney. For one of his gigs he made nougat… everybody loved it… Nougat Royale was born. “It didn’t just happen overnight, there was a lot of trial and error involved, just ask my friends, I tried every new recipe on them!” Says Ben.
After 12 years Ben is now the ‘go-to’ nougat man in Sydney. Ben is a massive favourite at The Beaches Market and has been here since the market’s opening day back in November 2011.
